HogWild Chicken and Cheese Quesadilla
CHICKEN AND CHEESE QUESADILLAS
- 4 Boneless, skinless chicken breasts, sliced into strips about ¼” to ½” wide
- 2 tablespoons olive oil
- 2 cups shredded mozzarella cheese
- 2 cups shredded cheddar cheese
- 8 large flour tortillas
- HogWild Spices Mexican Spice Blend
In a large skillet, heat olive oil. Place chicken in skillet and turn to coat in oil. Sprinkle pieces of chicken with HogWild Spices Mexican Spice Blend and sauté until chicken slices are cooked thoroughly. (NOTE: The more HogWild Spices Mexican Spice Blend that you use, the stronger flavor you will get. While the spice blend is not HOT, it gets warmer the more you use.) Remove chicken from skillet to paper towel to drain off olive oil.
On a large cookie sheet, place two tortillas. Spread slices of chicken onto each tortilla and top with ½ cup of each of the cheeses. Sprinkle with 1 (+) teaspoon HogWild Spices Mexican Spice Blend and cover with another tortilla. Place in 275 degree oven for 8 to 10 minutes or until cheese is fully melted. Repeat until all quesadillas are prepared. Cut into wedges and serve with chopped tomatoes, sliced olives, shredded lettuce and top with HogWild Mexican Style Sour Cream Dip!
